Cherry Tempest is a cocktail overture of aged cherry wood and passion fruit. This light smoke profile features a sweet, mild flavor with notes of tropical passion fruit fanfare that goes great with virtually everything. Cherry is one of the most popular woods for smoking and will pair with lighter wines and whiskeys.

Maple Myst is a floral symphony of aged maple wood, vanillin and flower petals. This mild and slightly sweet flavor lends itself well to spirits both neat and on the rocks. For food, poultry, small game birds, vegetables and cheeses will come alive with Maple Myst. 

Mulled Wine Oak is made from aged wine barrel shavings with mulling spice. Notes of traditional oak smoke flavor with fruits, flowers, herbs, spices and earthy characteristics. Cinnamon, cloves, star anise, peppercorn, and orange zest provide a festive aroma, sure to capture the taste of winter. Pairs exceptionally well with a smoked Hot Toddy, wine, whiskey or scotch. Great for holiday charcuterie. 

Sweet Texas Mesquite luxury flavored wood shavings made from aged Texas mesquite trees and known for the smokey flavor profile made famous in Texas BBQ. Added to this fuel is dried genuine Texas clementine peels to add a sweet balance to the smokey flavor. The fuel burns hot and fast, produces lots of smoke, and has an intense, earthy flavor. Mesquite is high in lignin, the component of wood that combusts to produce smoke, which makes it incredibly smokey and note that it emits sparks as it burns, so be careful! Makes a wonderful complement to both cheese, meats and whiskey on the rocks or in cocktails. Adds a great winter taste to dry red wines.

Whiskey Barrel Oak is made from aged whiskey barrels and offers the traditional oak smoke flavor with notes of caramel, vanilla, nuts, autumnal spices, and honey. Makes a wonderful Smoked Old Fashioned and a perfect complement to whiskey, bourbon or scotch on the rocks. 

Nutcracker Sweet is made from a cocktail of aged walnut and pecan wood planks and cinnamon. This fuel gives both a heavy smoke flavor and subtle soft caramel and nut overtones with a sweet after taste from the cinnamon. Pairs great with cocktails such as Hot Buttered Rum and makes a great Smoked Mulled Wine. Meats, cheeses and caramelized nuts are exquisite with this flavor.

Our woods are air dried for 18 to 24 months or kiln dried to 8% humidity, then shaved to a fine rolled leaf or flake, the optimal composition for the extraction of culinary flavor for smoke infusions.
